Thanksgiving Turkey Sausage Recipe

Thanksgiving Turkey Sausage
This is an adaption of the Turkey Sausage recipe you can find in the book Charcuterie, clinic by Michael Ruhlman

1 cup/200g Craisins – Crasins is a brand of dried sweetened cranberries
½ cup dry white wine – make sure it is really dry, cialis and not the least bit sweet
2 lbs Turkey Dark Meat – Thighs and Legs, no rx Sinew removed
1 lbs Turkey Light Meat
½ lb Turkey Gizzard and Heart Meat – You can omit this, I just had it so I used it.
1.5 lb Pork fat
40g Salt (I used ½ table, ½ kosher salt)
20g Sugar
6g Fresh Ground Pepper
12g Fresh Sage – Minced
3g Fresh Rosemary – Minced
1g Fresh Ginger – Grated
1g Ground Cloves
1g Cinnamon

Buttercrunch/Bibb Lettuce:

Young & Sweet. Cool mornings are making these things delicious!

Green Romaine:

Big crisp leaves, even on these young plants (thanks to the rain).

Red Romaine:

I take extra care with Red Romaine as it really benefits from staying cold. I can have this out of the ground and in your kitchen within hours!

Sweet Red Beet Greens:

These beets are about a month old. Young tender greens have a lot of sweet beet flavor.

Super Sweet Fresh Carrots

Salad Mix $9lb
A stunning mix of different colors, shapes and textures. Includes Green Oakleaf, Red Oakleaf, Green Romaine, Red Romaine, Lollo Rossa, Redleaf, and Bibb lettuces.


Toscano Kale $10lb
I have been working to achieve the classic, large, bug free leaves that I see on other farms and I finally have it! These Kale are stunning to see. Lacinato or “dinosaur” type. Unique leaf type: extra-dark green, noncurled but heavily blistered (savoyed).


Ruby Red Beets
Young Beets with tops $10lb
Beet Tops for saute $7lb
Round, smooth, deep red roots grow rapidly and uniformly. Sweet and tender, even when older. Medium-tall, red-veined greens for bunching.


Green Romain $11lb
These still have not reached the size of the giants you see at the store, but the leaves are sweet, tender bite, but still strong enough to be used as a wrap. Medium to dark green leaves are slightly savoyed.

Red Romaine $11lb
The slightly ruffled leaves are a dark red with a contrasting bright green base.


Green Oakleaf $12lb
Medium-green, oak-shaped leaves with rounded lobes. Very tender, sweet green lettuce.


Bibb/Butter Lettuce $9lb
I’m still working to get a better result growing butter head in the soil. I am a big fan of this lettuce, but I am learning that it is hard to get the same results as the hydroponic producers. Still tastes great, does not present quite as well as my other fine specimen.



Bordeaux Spinach $13lb
Very short supply on this stunningly beautiful spinach. Oakleaf shape, red stem.


Spinach $12lb


Endive/Chicory $10lb

Heads are large sized, very frilly, deep hearted, and self-blanching. Excellent, mildly bitter, sweet taste. Technically a French Grosse Pommant Seule type.


Dill $5 (whole plant is about 1/3lb)
I have about 20 spectacular Dill plants. Medium size, tender, delicate. Great tasting, and great looking.

Arugula $5lb

Very spicy, older leaves, best used sauteed.


Fresh Eggs $5 dozen

Assorted sizes and colors (brown, dark brown, green and blue)
